Happy Thanksgiving

A Toast! 


To anyone who's ever worked on Thanksgiving, New Years, Christmas or any other holiday while the rest of the world is partying. To all the Holidays we've missed working, cooking, serving, cleaning, sweating while the rest of the world wines and dines. Here's to us!


The service industry is one of the least respected industries in the world. Overworked and underpaid is very common in our world. I'm talking about your waiters, cooks, dishwashers, bartenders, flight attendants, pilots, even the employees at McDonalds or Dunkin Donuts. So please, this holiday season be nice to us, we deserve it. Put yourselves in our shoes for a day. Do we like working New Years Eve or Valentines Day? Do pigs fly? 


I haven't had a real thanksgiving dinner since I was 16, working in the restaurant industry hasn't given me the opportunity to do so. I do love what I do though. At least for me the sense of accomplishment, of making someones day, of a waiter or food runner coming back to the kitchen and saying "chef table 32 wants to speak to you" and customers telling you this was their best meal ever. The sense of working a long 15 hour shift when the tickets print out and never stop, where you use all your resources available just to try and stay above the water so you don't drown. When the GM comes to the kitchen and says "we did 400 covers tonight" then suddenly it hits you. You say wow job well done. No food returned. Nobody quit. Bring on the beer.
